Janson 749 - Panama

This is one of our favourite washed Geishas from Janson. It was mind blowing when we did the cupping - very sweet and floral. If you enjoy washed coffees with exceptional clarity, sweetness and a refined cup profile, this is one you won't want to miss.

This Geisha has an exceptionally high bean density, so it took us a number of roasting trials and careful adjustments to bring out its full potential. The quantity available is very limited, and we decided to release it simply because we wanted more people to experience just how special this coffee is.

Process

Washed. This lot went through an unusual preparation since anaerobic isolation is usually linked with Natural processing. In this case the cherries were depulped, removing the outer skin and exposing the fruit pulp. The depulped cherries were then placeds. After fermentation they were fully washed, and the beans, still in their parchment, were laid out to dry on raised beds for twenty one days.

In the cup

Lavender rises from the aroma. The cup is medium bodied with clear lavender, plumeria and jasmine notes. It is elegant, floral and very clean.
